The salad bar in the cafeteria at my work place carries some really good varieties of salads everyday. Their Caprese salad is one of the best I’ve ever had. I wanted to try making it at home since the very first time I had it there and got to do it only now.
This salad is so refreshing and is perfect for summer. The fresh basil imparts such a sweet and pleasant flavor to the salad. I made this for a party and was really suprised to see even small kids enjoy the mozzarella pearls in it.
It tastes the best when refrigerated and served cold. The longer it sits, the better it gets.

Ingredients
for the salad
1 cup fresh mozzarella pearls
2 cups cherry tomatoes
2 tablespoon chopped fresh basil leaves
for the dressing
2 tablespoon extra virgin olive oil
2 tablespoon freshly squeezed lemon juice
1/2 teaspoon freshly cracked pepper
salt
Preparation
Cut the cherry tomatoes into halves and transfer to a salad bowl. Add fresh mozzarella pearls.
Whisk together olive oil, lemon juice, salt and pepper. Drizzle over the tomatoes and cheese, and toss.
Mix in basil leaves, refigerate and serve cold.
